Blueberry pancake and smoothie recipe

February 14th may be the official date of love but we've always considered Shrove Tuesday or Pancake Day as it's also known as our one true love. To celebrate, we've brought you this super simple, quick and delicious pancake day recipe and smoothie accompaniment so you can wow your friends and family with little effort!
- 1 whole egg
- 1 cup of self-raising flour
- 1 cup of milk
- 200g blueberries
- 1/2 tablespoon of coconut oil
- 4 tablespoons of natural yoghurt
- 2 bananas
How to make the pancakes
Begin with the batter - crack 1 egg into a mixing bowl along with flour and milk. Whisk everything together until you end up with a smooth batter then fold in 200g of blueberries.
With a large frying pan set on medium heat, add 1/2 tablespoon of coconut oil ensuring an even coverage of oil across the pan. Add a few ladles full of batter across the pan (1 ladle full = 1 pancake) leaving plenty of space between each so they have room to spread out.
After 1 to 2 minutes of cooking, or until you have a golden base flip the pancakes using a fish slice. Once golden on both sides remove the pancakes and serve with a topping of natural yoghurt, sliced bananas and extra blueberries. We separated half a pot of natural yoghurt and left it freeze overnight in the freezer. This made a neat little yoghurt ice cream which can be placed on top of your pancake stack.
- 1 Cup fresh blueberries
- 1/2 Cup greek yoghurt
- 1/4 Cup Orange juice
- 1 tablespoon of white sugar
- 1/4 tablespoon of vanilla extract
- 1 pinch of ground cinnamon
- 3 ice cubes
Making the smoothie
To begin, add 1 cup of fresh blueberries. 1/2 cup of greek yoghurt, 1/4 cup of orange juice, 1/4 tablespoon of vanilla extract together in a blender. Depending on your preference add up to 1 tablespoon of white sugar and 1 pinch of ground cinnamon.
Blend on a low speed for 30 seconds to combine the mixture then add ice cubes and blend on a high speed for a further 2 minutes or until smooth.
Serve in a glass of your choice and finish with a sprig of mint and a handful of blueberries on top.
