Ingredients

  • 1 packet of gnocchi
  • 1 tablespoon of olive oil
  • 1 tablespoon of dairy free butter
  • 1 cup of cherry tomatoes 
  • 8 ounces of sliced mushrooms
  • 2 garlic cloves, minced
  • 1/2 cup of oat cream
  • 1/2 cup of dairy free cheese
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • Fresh parsley, chopped for garnish

Instructions

  1. Start by cooking the gnocchi in a large pot of salted boiling water. Cook the gnocchi until they float to the surface, which should take around 2-3 minutes. Once cooked, remove them from the pot with a slotted spoon and set them aside.
  2. Heat the butter in a large pan over medium-high heat. Add the minced garlic and sauté for a minute or until fragrant.
  3. Add the sliced mushrooms and minced garlic to the pan. Cook for 5-7 minutes until the mushrooms are tender and browned.
  4. Add the halved cherry tomatoes to the skillet and cook for 3-4 minutes until they are softened.
  5. Pour the heavy cream into the skillet and stir to combine with the mushroom and tomato mixture. Let the cream simmer for 2-3 minutes until it thickens slightly.
  6. Add the cooked gnocchi to the skillet and toss them with the sauce until they are coated.
  7. Sprinkle in the grated cheese, salt, and black pepper to taste. Stir until the cheese is melted and the sauce is smooth.
  8. Add the mushrooms and cooked  gnocchi to the pan and toss until the gnocchi is coated in the sauce.
  9. Cook for an additional 2-3 minutes until the gnocchi is heated through.
  10. Serve hot, garnished with fresh basil leaves and enjoy!
